New non-alcoholic accompaniment at Lakeside

No spirits, consciously: Hamburg two-star restaurant develops drinks accompaniment based on tea, kombucha, spritzers and self-mixed drinks

HAMBURG: The service team at the two-star restaurant "Lakeside" in Hamburg's The Fontenay Hotel has come up with a special menu accompaniment in the form of exclusively non-alcoholic drinks. This allows the seven-course menu to be accompanied by a wide variety of flavours.

"The non-alcoholic menu accompaniment at Lakeside has been very well received by our guests," says Restaurant Manager Michel Buder. "Regardless of whether you don't want to, don't like or are not allowed to drink alcohol, this allows you to enjoy your meal without compromising on flavour or experience," adds Michel Buder. Of course, the non-alcoholic version can also be combined with the matching wines on a course-by-course basis.

Junior Sommelière Ann Katrin Spyra developed the concept together with Master Sommelier Stefanie Hehn and Restaurant Manager Michel Buder and explains the procedure: "As soon as a new menu component is communicated and explained by the kitchen, we sit down together to create a suitable drinking accompaniment based on the flavours and ingredients. We use flavoured teas, kombucha, juice spritzers and drinks that we mix ourselves. The focus is on creating a complete picture, similar to that of a wine accompaniment. It is important to us that the drinks are not too sweet or filling." The Lakeside team alternates between its own creations, which also use oils and brews from the kitchen, and high-quality products from long-standing partners such as Kombucha from Muri Copenhagen or the Sparkling Tea Company.

The Lakeside Restaurant on the seventh floor of The Fontenay Hotel is bright, flooded with light and offers spectacular panoramic views over Hamburg. Julian Stowasser and his team cook here - for the soul and at the highest level. The creations at Lakeside are delicious, but also unconventional, bold and unexpected in their combinations.
