Restaurant VOTUM, Hanover
"Benjamin Gallein and Nico Kuckenburg have already proved together in the "Ole Deele" that they can cook. The wealth of ideas and creativity were already impressive there, and it's no different here at Votum. What I particularly like, however, is how traditional craftsmanship and sometimes even classic dishes are brought up to date here. And even the more unusual combinations never stray from the path of harmony. Modern cuisine can easily come across as tiring or cerebral. You sit in front of your plate and think about whether you like it, because it has been explained for ages how many components the dish consists of and how elaborately they have been prepared. By this point at the latest, you realise that it tastes interesting at best. Which is about the same as saying that it is very hard-working in a job reference, which is not the case here. Yes, the cuisine at "Votum" is modern and contemporary, but it is not exhausting. Occasionally, but very rarely, challenging, but nevertheless accessible. More importantly, it tastes good. And it's in tune with the times." (Published in June 2024)
