Alexander Dressel takes over restaurant in Potsdam

With Hee-Sun Kim, the former Michelin-starred chef wants to set new impulses in the "Zur historischen Mühle" restaurant

POTSDAM: The traditional restaurant "Zur historischen Mühle" (formerly "Mövenpick Restaurant") in Potsdam is pleased to announce its new management team: Hee-Sun Kim and Alexander Dressel, two experienced and passionate restaurateurs, will jointly steer the fortunes of the establishment in future.

Hee-Sun Kim, born in Berlin, has an impressive career in the catering industry. He was Restaurant Manager at The Grand Hotel Ahrenshoop from 2021 to 2023, where he successfully managed both the tapas restaurant Zimtziege and the restaurant Weitblick. He implemented new quality standards and trained the service staff there and was previously Hotel Manager of the Fontane Hotel on Lake Werbellin from 2019 to 2021, where he carried out extensive restructuring and modernisation. As Managing Director of the Alverdes Restaurant, he developed an innovative Asian-Oriental fusion cuisine concept in 2018/19. Kim lives with his family in Ribnitz-Damgarten.

Alexander Dressel, is an experienced chef and hotel manager. With a Master of Business Administration (MBA) and a solid training as a chef, he successfully managed the Romantik-Hotel Bayrisches Haus in Potsdam for 16 years. During his tenure, the gourmet restaurant was continuously awarded a Michelin star. Dressel is known for his outstanding leadership qualities and entrepreneurial mindset. His professional career includes positions as head chef and hotel manager in renowned hotels and restaurants in Germany and Italy. He was also involved for many years in various positions with Jeunes Restaurateurs Deutschland e. V., most recently as President of the German association and Vice-President of the European umbrella organisation, and was committed to promoting young talent in the gastronomy sector.

Shared vision

With Hee-Sun Kim and Alexander Dressel, a dynamic and competent team is taking over the management of "Zur historischen Mühle". The two restaurateurs complement each other perfectly and bring both fresh ideas and proven concepts to the table. Together with the team, they have already developed exciting new ideas to make the restaurant a favourite destination for Potsdam's locals once again.

Since the beginning of July, there has been an extensive breakfast menu for the whole family at weekends and on public holidays. A picnic offer will also be introduced soon, where guests can pick up pre-ordered picnics and take them with them to the Schlössernacht, for example. The team will be working on a new concept until the autumn, which will include opening the restaurant in the evenings.

"We are looking forward to delighting guests with first-class service and culinary highlights. Our aim is to further establish the 'Zur historischen Mühle' restaurant, from the beer garden to the restaurant and event area, as one of the top addresses in Potsdam," say Kim and Dressel.

Dressel adds: "Then as now, I'm thrilled by the constant development of the city. I like the certain cosiness compared to the "hectic suburbs of Berlin". Now I am looking forward to a new task in Potsdam. For a long time, most guests associated the Historische Mühle with the gastronomic concept of the previous operator. The change now makes a reorganisation necessary. It's an exciting task and I'm looking forward to being able to contribute my experience to the collaboration. Of course, we also want to keep the tried and tested or add it to the programme. The location of the Historische Mühle is unique and offers many opportunities. I am confident that we will succeed in becoming not only a place for tourists to visit, but also a restaurant for the people of Potsdam and a popular event location.

The restaurant "Zur Historischen Mühle" in Potsdam, located between the historic mill and Sanssouci Palace, offers a unique combination of tradition and culinary excellence. With a Palm House that seats around 240 and a variety of function rooms, it is the ideal venue for groups, receptions, weddings, company celebrations and business lunches. A children's menu and a playground also make the restaurant attractive for families. The new management team is looking forward to spoiling guests with a varied gastronomic offering in a breathtaking ambience.
