Le petit CINQ in Saarbrücken serves classic cuisine with a soul food flavour

SAARBRÜCKEN. Creative, bold, different: Le petit CINQ, the new, second restaurant at Boutique Hotel ESPLANADE Saarbrücken, has been open since Sunday 21 July 2020. Here, purist internationality meets the joy of seasonal delicacies, and classic cuisine is reinterpreted in a refreshing way by Head Chef David Wottke.

David Wottke, the newly appointed Head Chef of Le petit CINQ and long-time chef at the two-star restaurant ESPLANADE, stands for casual, informal yet sensual flavoured cuisine with a very personal touch. His dishes appeal to the heart and soul, they are modern and timeless at the same time: "soul food" in the best sense of the word. The focus of David Wottke's cuisine is not on flawless aesthetics, but solely on the products, their creative processing and the unique culinary experience. With playful sophistication and a great love of experimentation, the 26-year-old creates dishes that change every week and are designed to surprise and delight guests time and time again.

Ambitious and courageous, David Wottke deliberately sets himself creative challenges at Le petit CINQ. Not only can his guests choose between a newly composed 3- or 4-course menu every week, but they can also be served vegetarian versions. With unconventional ideas and the highest standards, the Head Chef creates a vegetarian alternative of the same standard for each course, which is based on the flavours of its non-vegetarian counterpart. Like the two-star restaurant ESPLANADE, Le petit CINQ is also committed to the shared philosophy of sustainable culinary culture, which is based on the use of regional products from the restaurant's own biodynamic farm. Culinary creativity, a love of home and sustainable values harmonise here. Le petit CINQ welcomes its guests from Sundays to Tuesdays and offers locals as well as national and international guests new opportunities to experience unique moments of indulgence in Saarbrücken, which has been rather tranquil in culinary terms to date at the beginning of the week.

Before David Wottke, born in 1998, took on the role of Head Chef at Le petit CINQ, he had already spent seven years as a chef at the two-star restaurant ESPLANADE alongside his long-time mentor Silio Del Fabro. David Wottke shares with the chef de cuisine and culinary director of the entire ESPLANADE the courage to break new ground, a passion for regional products and the highest standards of product quality. They also share a love of the refined cuisine of Japan, which serves as an important source of inspiration, as well as an unpretentious, honest, modern management style based on a harmonious and friendly kitchen atmosphere that is ambitious but always cordial. David Wottke's exceptional talent led him to earn the trust of his mentor at an early stage and to fulfil the role of Cuisiniers alongside Silio Del Fabro from the beginning of his training. His appointment as Head Chef at Le petit CINQ also reflects the personal appreciation of his mentor Silio Del Fabro.

The number "Cinq" in the restaurant's name is derived from the house number of the Boutique Hotel ESPLANADE Saarbrücken, which is home to Le petit CINQ. The lettering "CINQ" deliberately breaks up the rectangular border - a reminiscence of the floor plan of the Wilhelminian style building - and indicates that conventions are deliberately broken here in order to create new flavour experiences. "Le petit" refers to the upscale yet casual bistro character, which is expressed in the loosely curved handwriting that corresponds with David Wottke's cooking style. The modified letter "N" of the lettering "CINQ" symbolises self-confidence and the freedom to be different, as well as the courage to go one's own way in culinary terms and to constantly discover and create something new. The French spelling of the entire name emphasises the proximity to France and to guests from the neighbouring country.
