Local heroes and global flavours at the heart of Cornelia Fischer's new fine and fun dining concept

ROTTACH-EGERN. The Überfahrt restaurant is back: from Friday evening, the gourmet location at the Althoff Seehotel Überfahrt will be welcoming guests with a completely revamped concept under the direction of top chef Cornelia Fischer - the credo "Regional solidarity with a view of the world" focuses on local heroes and global flavours. It is not only the culinary philosophy that is new, the interior has also been given a fresh look. The ambience in the restaurant is relaxed and invites you to feel good.

A journey of flavours inspired by the cycle of nature

Guests can choose between two menus - one vegetarian, one with meat - but can also put together their own personalised à la carte menu as an alternative and pleasantly flexible option. The focus is predominantly on local products, which are served in a cosmopolitan way. The motto: regional ties with a view of the world. Cornelia Fischer elegantly bridges the gap between the fine cuisines of the world and her deep roots at home. She takes guests on a culinary journey that knows no boundaries in terms of flavour and - inspired by the eternal cycle of nature - always leads back to the beginning. The metaphor of the circle runs like a red thread through the chef's philosophy Individual "heroes", such as celery or carrots, appear again and again in the menu in different ways - artful, surprising and arousing curiosity for the next course. The "harbingers" ensure that the palate is in the right mood for the flavour experience on the plate that immediately follows. They consist of the same components as the upcoming dish and yet are interpreted in a surprisingly different way.

The menu is based primarily on regional and soon also home-grown products that combine sustainability and unconditionally good flavour. From next year, the majority of the ingredients will be grown in greenhouses in the hotel's own garden. Home-grown produce will allow maximum self-determination, for example in terms of ripening time and harvest time - a factor that significantly expands the spectrum of flavour experiences. The kitchen team, which currently has five members, sources food that it cannot grow itself from regional businesses and hand-picked supra-regional suppliers that guarantee sustainable production methods. This results in a resource-saving variety of products that can be enjoyed with a clear conscience. Host Marie Christin Baunach is responsible for the matching wine pairings and a well-stocked selection of non-alcoholic options, including sparkling tea and homemade juices. The top sommelier previously worked at the Überfahrt before moving to the nearby Haubentaucher restaurant.

Local reference also in design and ambience

The Überfahrt restaurant has not only reinvented itself in terms of its cuisine, the interior has also been given a new lease of life. The new design reflects the Tegernsee location, the colours are natural, local and calm. The background music in the restaurant is subtle and supports the pleasant, relaxed atmosphere. Last but not least, the service staff have also been given new outfits by local designer Kinga Mathe - traditional without being old-fashioned. The service is also relaxed, approachable and not laden with ritual. The motto is: Fine, fair and fun dining at its best!

Cornelia Fischer: "It feels great to be back here"

The reigning "Chef of the Year" in the Schlemmer Atlas is recognised as one of the greatest culinary talents in the German-speaking world. After completing her hotel apprenticeship, she developed an extraordinary interest in cooking and went on to train as a chef for a second time, which she completed in 2011 as the best of her year at the Fulda Chamber of Industry and Commerce - the start of an impressive professional career that has taken the 39-year-old to first-class kitchens in Germany and Switzerland. After her first job as chef de partie at Restaurant Überfahrt, she worked for two years as sous chef for three-star chef Andreas Caminada in Switzerland. The native of Lower Franconia moved back home from Graubünden in 2021 and was responsible for two restaurants as head chef at Hotel Zur Schwane, including the Michelin-starred "Weinstock".

Cornelia Fischer is delighted to be returning to her former place of work: "My start at Restaurant Überfahrt was great, it feels like coming home. We have a great team in the kitchen and service, which has worked wonderfully well over the past few weeks. The booking situation is pleasing and we are very excited about the initial feedback from our guests."
