Gusto newcomer of the year plans to launch the cølbo restaurant in November

KLINGENBERG AM MAIN. Moritz Techet is planning his own restaurant in his home town of Klingenberg am Main. Restaurant cølbo is due to open in November, he told Restaurant-Ranglisten.de. As reported, Moritz Techet was recently honoured by Gusto as Newcomer of the Year for his work as head chef at Restaurant HIO in Hilzhofen.

"After many years in various renowned kitchens, from Heinz Winkler and Christian Bau to Gastrologik in Stockholm, Mraz und Sohn in Vienna and KOKS on the Faroe Islands, I decided to set up something of my own," he explains. cølbo will merge two of his great culinary passions: classic French cuisine and the new Nordic cuisine. The menu will change seasonally, always with a focus on regional products and a creative approach. "We have a very open kitchen where guests can experience first-hand how the dishes are prepared and served. We have a maximum of 16 guests, who are looked after by my wife in service, myself and another chef. So we are a small, very informal restaurant," says Moritz Techet, describing his concept.

The restaurant itself will have a minimalist and Scandinavian-inspired interior. The aim is to create a warm atmosphere that provides the perfect setting for the culinary experience. "Everything is geared towards offering our guests not only first-class cuisine, but also a relaxed time," says Moritz Techet, looking forward to his restaurant.
