Berlin-based Horváth comes to Austria

At the beginning of 2025, the two-star restaurant will present its cuisine at Restaurant Herzig for almost two weeks

BERLIN: The renowned two-star restaurant Horváth from Berlin is returning to the home country of chef Sebastian Frank at the beginning of 2025. From 22 January to 2 February 2025, guests in Vienna and the surrounding area will have the unique opportunity to experience the cuisine of Sebastian Frank, one of Austria's culinary figureheads. For almost two weeks, Horváth will take over the Herzig restaurant in Vienna's 15th district. Horváth will be serving an exclusive menu from Wednesday to Monday from 6.30 p.m. and at weekends from 12.00 p.m. Guests can expect a selection of seven classics from Sebastian Frank's kitchen for 220 euros.

For the native of Lower Austria, who completed his training at the four-star Hotel Wende in Neusiedl am See and later worked at the renowned Steirereck restaurant under Heinz Reitbauer Jr, returning to Austria is an affair of the heart. "Even as a child, it was obvious that I belonged in the kitchen," says Frank, who already knew at the age of 13 that he wanted to be a chef. After his time at the Steirereck, he gained experience at the Interalpen-Hotel Tyrol before taking over the kitchen at Restaurant Horváth in Berlin in 2010. In 2011, Frank cooked his first star in the Michelin Guide. In 2014, he took over the restaurant together with his wife Jeannine and only one year later, the second star followed. His innovative and unconventional cuisine has been recognised by Gault & Millau with 5 toques since 2023. The restaurant guide writes about his work: "Independent of conventions and norms, Sebastian Frank breaks with the traditional rules of haute cuisine and serves the most individualised menu in Germany. His powerful dishes are all about creating authentic flavours that reflect his culinary identity."

Despite Berlin's exciting food scene, Frank always feels a longing for his native Austria and the culinary environment of Vienna, which is why he is now fulfilling a long-cherished dream and bringing his entire team to Vienna for a fortnight to present his creations. In the recently published edition of the German restaurant guide Gusto, Horváth was once again awarded the highest rating: "Frank is without doubt one of the rare individualists among top German chefs with his own unmistakable signature. With an unbridled desire to experiment and a great flair for composition. Someone who inspires and polarises with his unconventional way of cooking.

Since 2022, Sebastian Frank has consistently focussed on "emancipated vegetable cuisine". No physical pieces of meat or fish are served at Horváth, but the cuisine is not strictly vegetarian or vegan. Ingredients such as lard, veal jus or animal fats find their place in the dishes in a subtle way - they serve as supporting elements to enhance the flavours. However, the focus is on vegetable creations that reflect his culinary origins. With dishes such as "Celery Ripe & Young", "Mushroom Liver" and "First Stitch", Sebastian Frank has set international standards in modern vegetable cuisine and established himself as a pioneer in this field. The Viennese can look forward to a unique culinary journey that Sebastian Frank and his team will bring to Austria in January 2025.
